If asked about the signature local specialties of Jangheung, nine out of ten locals will name “Jangheung samhop”, beef, penshell and shiitake mushroom combo. Shiitake mushrooms grown in Jangheung have a particularly strong aroma and flavor due to the clean natural environment, including forests and the ocean.
This “high-profile” mushroom is featured in another local delicacy that offers a completely new way to enjoy shiitake mushrooms.

Jangheung is one of the most well-known shiitake mushroom-producing regions in the country. The key to producing top-quality shiitake mushrooms is its natural environment, which boasts mountains, forests, ocean, mudflats, fertile soil, and a mild climate. The sea wind makes the mushrooms develop a firm texture and a rich aroma as they grow. Shiitake mushrooms produced in Jangheung keep their distinct flavor even when cooked together with other ingredients.
“Stuffing” refers to a style of cooking in which one scrapes out the inside of one ingredient and fills it with other ingredients. Cucumbers, bell peppers, tomatoes, boiled eggs and various other ingredients are used in stuffed dishes. But if you use shitake mushrooms as the main ingredient, they will add a much better texture to the stuffed dish. What is interesting and convenient about stuffed food is that the food is served in the main ingredient itself. Shiitake mushrooms with the stems cut off can be used as serving plates, and even the cut-off stems can be chopped up finely and used as filling for the dish. In this way, you can maximize the use of shiitake mushrooms and further enhance the unique flavor of the mushrooms in your dish.
Stuffed food is usually served as an appetizer to stimulate the appetite before starting the main dish. Stuffed shiitake mushrooms also make a great finger food to go with wine, as well as excellent food item for a party as they are pretty to look at.

Stuffed Mushrooms
Ingredients6-8 shiitake mushrooms, 1 onion, 1 tablespoon of minced garlic, bread crumbs, salt, pepper, tomato sauce, Parmigiano Reggiano cheese, dried ground parsley
How to cook- Cut off the stems of the mushrooms and chop them roughly. Chop the onion finely.
- Put the chopped mushrooms, chopped onion, and minced garlic in a pan and stir-fry them until they leave little moisture in the pan.
- Sprinkle some salt and pepper and add the bread crumbs. Stir-fry the mixture until it turns golden brown.
- Put a table spoon of tomato sauce in each of the mushroom heads and stuff them with the prepared mixture.
- Sprinkle some Parmigiano Reggiano cheese and parsley over them.
- Preheat the oven to 180℃ and roast the stuffed mushrooms until their tops turn golden brown.
- Enjoy the stuffed mushrooms!
